Directions
Prepare the Keto Tortilla Dough (35 minutes)
Combine the Sonora Keto Tortilla mix with 2/3 cup warm water, 1 egg, and 1 tablespoon lard or olive oil in a mixing bowl. Mix well until a dough forms.
- Mix thoroughly and chill the dough for 30 minutes.
- Remove dough from refrigerator and divide into 8 balls (slightly larger than the traditional 12 for gordita size).
- Press each dough ball until approximately 1/2" thick dough patties are formed.
Toast the Tortilla Patties (8 minutes)
In a skillet on medium-high heat, lightly toast each side of the dough patty until slightly golden, about 2-3 minutes per side. This will help hold the dough together when frying.
Fry the Gorditas (10 minutes)
Heat safflower oil to 380°F in a pan with approximately 1" depth.
Fry each dough patty one side until golden, which is approximately when the dough should "puff" (about 2-3 minutes). Then flip and cook the other side until golden. Set aside on paper towels to drain.
Prepare the Beef Filling (10 minutes)
In a skillet over medium-high heat with olive oil, cook the ground beef with the sliced onion, taco seasoning, salt, and pepper until the beef is fully cooked and the onion is translucent, about 8-10 minutes.
Assemble the Keto Gorditas (5 minutes)
Create a slit in the edge of each fried gordita, carefully slicing inside the gordita to create a pocket for the filling.
- Fill each gordita pocket generously with the beef mixture, crumbled queso fresco, diced tomato, and fresh cilantro.
- Serve immediately and enjoy these keto-friendly gorditas that prove following a keto diet doesn't mean sacrificing flavor!
Recipe Note
Can I prepare any parts of the recipe in advance?
Yes. You can make the tortilla dough ahead of time — mix it, chill it, and even shape it into patties. Store the uncooked patties in the refrigerator between parchment sheets. You can also cook the beef filling in advance and keep it in an airtight container for up to 3 days. When ready to eat, simply fry the patties fresh and assemble the gorditas.
Can I substitute the ground beef with another protein?
Absolutely. While this recipe uses ground beef with taco seasoning, you can substitute with ground chicken, turkey, or even shredded rotisserie chicken. For a vegetarian option, sauté mushrooms, zucchini, or use seasoned beans (if they fit your keto plan).
What oil is best for frying the gorditas?
The recipe suggests safflower oil, which has a high smoke point and neutral flavor, making it great for frying. However, you can also use avocado oil, lard, or another keto-friendly oil with a high smoke point to achieve the same crispy texture.
