Gorditas are delicious fried masa balls that are then filled with meat, chicken or beans and cheese. This recipe describes a quick way to make them using Sonora Keto Tortilla mix hamburger meat and taco seasoning, but fill them with your favorite protein -- they're great!
- 1 bag Sonora Keto Tortilla mix
- 1 tablespoon lard or olive oil
- 1 cup water
- 1 tbsp. olive oil
- 1/2 yellow onion, sliced
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 cups crumbled Queso Fresco
- 1 package taco seasoning
- 1 lb ground beef
- ½ cup cilantro
- 1 diced tomato
Combine Sonora Keto Tortilla mix with 1 cup warm water, 1 tablespoon melted lard or olive and mix well.
Wrap tortilla dough in plastic and chill in refrigerator for 1 hour.
Remove dough from fridge and form eight balls. The mash the dough balls until approximatey 1/2" thick dough patties are formed.
In a skillet on medium high, lightly toast each side of the dough patty until slightly golden. This will help hold the dough together when frying.
In a pan with approximately 1" of safflower oil at 380°F, fry each dough patty. Fry one side until golden, which is approximately when the dough should "puff". Then flip and cook other side until golden. Set aside on paper towels.
In a skillet over medium-high heat with olive oil, cook the hamburger meat with the onion, taco seasoning, salt and pepper.
Create a slit in the edge of the fried gorditas, slicing inside the gordita to create a pocket for the hamburger filling.
Fill the gordita pockets with the meat mixture, queso fresco, tomato and cilantro. Then enjoy!
Makes 8 gorditas!
