Tamale Casserole

Keto Chicken Tamale Casserole (Tamal Perdido)


You don't have to make tamales to enjoy the flavor!  Use Sonora Keto Tamale Masa to make this fantastic keto tamale casserole recipe!

Tamale Masa Ingredients:

  • 1 bag Sonora Tamale Masa mix
  • 2 tablespoons lard or olive oil
  • â…” cup warm water

    Mexican Chicken Topping Ingredients:

  • 2 cups of red enchilada sauce
  • 1 pound of shredded rotisserie chicken, cooked
  • 2 teaspoons of taco seasoning
  • 1 cup of Monterey Jack cheese, shredded
  • 1 scallion, sliced
  • 1/2 cup chopped cilantro
  • 1 cup cherry tomatoes, halved
  • Sour Cream, as desired


      1. Preheat your oven to 190C/375F.
      2. In a mixing bowl, combine the Tamale Masa ingredients listed above. Mix well.
      3. Grease a 9X9 casserole dish with olive oil spray, then pour in the tamale masa mix and smooth out across the bottom of the dish (and along the sides if you wish).
      4. Bake for 12-15 minutes, until golden brown.
      5. Using a fork, poke holes in the tamale masa.  Then pour half of the enchilada sauce over it. Set aside.
      6. Place the chicken into a mixing bowl, along with the taco seasoning and remaining enchilada sauce. Mix well.
      7. Spoon the chicken mixture over the tamale masa and top with the cheese.
      8. Bake for 15-20 minutes until the cheese is browned.
      9. Serve hot with a dollop of sour cream, if desired.
      10. Then top with scallions, cilantro, and tomatoes.
