Directions
In a large bowl, whisk together almond flour, coconut flour, sugar-free pudding mix, baking powder, xanthan gum, and salt.
- In a separate bowl, beat eggs, then add melted butter and warm heavy cream.
- Combine wet and dry ingredients, mixing until you have a smooth, pipeable dough.
- Transfer mixture to a pastry bag fitted with a large star tip.
- Heat oil to 350°F (175°C) in a deep pot or fryer.
- Pipe 4-inch churros directly into hot oil. They cook quickly, so watch carefully!
- Fry for 2-3 minutes until golden brown, flipping once.
- Remove and immediately roll in sugar-free cinnamon mixture while still hot.
- Serve warm and enjoy your authentic keto churros!

What sweeteners work best for the cinnamon coating?
For the best flavor and texture, use a keto-friendly sweetener that doesn't have a cooling aftertaste. Allulose or monk fruit–allulose blends are excellent because they taste closer to real sugar and caramelize beautifully.
