Keto Steak Quesadillas

If you're not familiar with quesadillas, they're part soft taco, part sandwich.  The trademark ingredient is cheese, which is what binds all of the the filling ingredients together into a deliciously cheesey finger food!  This recipe uses Sonora Keto Tortilla mix for a fantastic low-carb snack or dinner solution!


Tortilla Ingredients

Filling Ingredients

  • 1 tbsp. olive oil
  • 1 bell pepper, sliced
  • 1/2 yellow onion, sliced
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups shredded Monterey Jack
  • 4 cups thin sliced steak (or shredded chicken)
  • 1 avocado, thinly sliced
  • ½ cup cilantro
  • 1 green onion, thinly sliced
  • Sour cream, for serving
  • Salsa, for serving


Step 1

Make 8 large tortillas using instructions on Sonora Keto Tortilla mix bag.

Step 2

In a medium skillet over medium-high heat with olive oil, saute bell pepper and onion and season with salt and pepper. Transfer to a plate.

Step 3

In a medium bowl, stir together the cheese and chicken.

Step 4

Place the tortilla in a skillet on medium-high. Add cheese, then the onion-pepper mixture, steak or shredded chicken, and then cheese again on top across half of the tortilla.  Fold the other side of the tortilla over the filling. Heat each side until cheese is melted, being careful not to overcook the tortilla.

Step 5

Remove the quesadilla. Garnish with avocado, green onion, cilantro and sour cream (and salsa too for a little kick!) before serving.
