Directions

- Set aside to cool completely.
Make the Tortilla Chips
Cut each cooled tortilla into quarters to make triangular chips.
- Heat oil in a large skillet over medium-high heat.
- Fry the tortilla quarters in batches until they just start to turn golden.
- Remove and drain on paper towels. They will continue to crisp as they cool.
Prepare the Toppings
If using ground beef, cook it in a skillet until browned and fully cooked. Season with salt and pepper.
- Dice the tomatoes and slice the green onions and jalapeños.
- Warm the black soy beans if desired.
- Shred the cheese if not already done.
Assemble the Nachos
Preheat your oven to broil.
- Arrange the tortilla chips on individual plates or a large baking sheet.
