Ingredients
- 3 lbs chicken thighs, boneless and skinless
- 1 cup sour cream
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 tbsp no-sugar-added ketchup
- 1 tbsp garlic salt
- 2 tbsp Aleppo red pepper flakes (or substitute with paprika + a pinch of cayenne)
- 1 1/2 tsp ground cumin
- 1 tsp ground pepper
- 1 tsp paprika
- 1/8 tsp cinnamon
Directions
Prepare the Marinade In a large bowl, whisk together sour cream, lemon juice, olive oil, ketchup, garlic salt, Aleppo pepper flakes, cumin, ground pepper, paprika, and cinnamon until smooth and well combined.
- Marinate the Chicken Add the chicken thighs to the bowl. Open each thigh slightly so the marinade coats every crevice. Cover with plastic wrap and refrigerate for at least 1 hour to let the flavors soak in. (Overnight is even better.)
- Skewer the Chicken Thread the marinated chicken onto two skewers per piece. The double skewers make it easier to flip on the grill.
- Grill to Perfection Preheat your grill to medium-high heat. Support the skewers on bricks or the grill edges so the meat doesn't rest directly on the grates. Grill, turning occasionally, until about 20% of the surface has a light char—this gives the chicken its signature flavor. Total grill time is about 15–20 minutes, or until the internal temperature reaches 165°F (74°C).
- Serve Slide the chicken off the skewers, garnish with fresh parsley if desired, and pair with your favorite salad.

Can I substitute sour cream with yogurt?
Yes. The original recipe uses yogurt, but sour cream is a low-carb alternative that keeps it keto-friendly.
What if I can't find Aleppo pepper flakes?
