Keto Beef Gorditas

Ingredients

    • 1 tbsp olive oil
    • 1/2 yellow onion, sliced
    • 1 lb ground beef
    • 1 package taco seasoning
    • Kosher salt, to taste
    • freshly ground black pepper, to taste
    • 1 cup crumbled Queso Fresco
    • 1/2 cup cilantro
    • diced tomato
    • 1 cup safflower oil for frying

    Directions

      1. Combine the Sonora Keto Tortilla mix with 2/3 cup warm water, 1 egg, and 1 tablespoon lard or olive oil in a mixing bowl. Mix well until a dough forms.

      2. Mix thoroughly and chill the dough for 30 minutes.
      3. Remove dough from refrigerator and divide into 8 balls (slightly larger than the traditional 12 for gordita size).
      4. Press each dough ball until approximately 1/2" thick dough patties are formed.

      1. In a skillet on medium-high heat, lightly toast each side of the dough patty until slightly golden, about 2-3 minutes per side. This will help hold the dough together when frying.

      1. Heat safflower oil to 380°F in a pan with approximately 1" depth.

      2. Fry each dough patty one side until golden, which is approximately when the dough should "puff" (about 2-3 minutes). Then flip and cook the other side until golden. Set aside on paper towels to drain.

      1. In a skillet over medium-high heat with olive oil, cook the ground beef with the sliced onion, taco seasoning, salt, and pepper until the beef is fully cooked and the onion is translucent, about 8-10 minutes.

      1. Create a slit in the edge of each fried gordita, carefully slicing inside the gordita to create a pocket for the filling.

      2. Fill each gordita pocket generously with the beef mixture, crumbled queso fresco, diced tomato, and fresh cilantro.
