Directions
Prepare the churro batter: In a mixing bowl, combine the Sonora Keto Churro Mix with the water and stir until a smooth batter forms.
Fry the churros: Heat coconut oil in a skillet over medium heat. Pipe or spoon small pieces of churro batter into the hot oil and fry until golden brown and crispy. Remove and drain on paper towels.
Dust and cool: While still warm, lightly dust churro pieces with allulose. Allow them to cool completely.
Make the mascarpone cream: In a separate bowl, whip the mascarpone with allulose, stevia, cinnamon, vanilla, and salt until light, smooth, and fluffy.
Soak the churros: Place the cooled churro pieces in a shallow dish and pour the sugar-free coffee liqueur over them. Let them soak until they absorb the liquid and become soft but not mushy.
Assemble the dessert cups: Add a layer of soaked churros to the bottom of each dessert cup.
- Spoon a layer of mascarpone cream on top.
- Repeat with another churro layer and finish with more mascarpone.
Finish and garnish: Dust the tops with instant coffee powder. Garnish each cup with a whole churro piece, if desired.
