    • 1 large egg

    • 3/4 cup warm water

    • 1/4 cup Swerve (or your preferred granular monkfruit-based sweetener)

    • 1 cup preferred low-carb confectioners sweetener

    • 2-3 tablespoons water or almond milk

    Directions

    1. Prepare the Dough: In a medium mixing bowl, combine the SONORA Keto Bolillo Mix, 1/4 cup of Swerve, the egg, and the warm water. Knead the dough by hand for 3 minutes until it is smooth and well-combined. Cover the bowl and let the dough rest for 1 hour in a warm spot.

    2. Preheat and Prep: Towards the end of the resting time, preheat your oven to 350°F (175°C). Line a standard 8x4 inch loaf pan with parchment.

    3. Make the Filling: In a small bowl, mix together the 1/3 cup of Swerve and 1 tbsp of cinnamon until fully combined.

    4. Assemble the Loaf: Place the rested dough on a piece of parchment paper. Roll or press it out into a rectangle, approximately 8 inches wide and 12 inches long.

    5. Add the Swirl: Sprinkle the cinnamon-swerve mixture evenly over the dough, leaving a small border around the edges.

    6. Roll and Bake: Starting from the short end, tightly roll the dough into a log. Pinch the seam to seal it. Carefully place the log, seam-side down, into your parchment-lined loaf pan.

    7. Bake to Perfection: Bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

    8. Cool and Serve: Let the loaf cool in the pan for at least 20 minutes before transferring it to a wire rack to cool completely. Once cool, slice and enjoy!

    9. Optional: Drizzle low-carb icing over top of loaf.
