Prepare the Dough: In a medium mixing bowl, combine the SONORA Keto Bolillo Mix, 1/4 cup of Swerve, the egg, and the warm water. Knead the dough by hand for 3 minutes until it is smooth and well-combined. Cover the bowl and let the dough rest for 1 hour in a warm spot.
Preheat and Prep: Towards the end of the resting time, preheat your oven to 350°F (175°C). Line a standard 8x4 inch loaf pan with parchment.
Make the Filling: In a small bowl, mix together the 1/3 cup of Swerve and 1 tbsp of cinnamon until fully combined.
Assemble the Loaf: Place the rested dough on a piece of parchment paper. Roll or press it out into a rectangle, approximately 8 inches wide and 12 inches long.
Add the Swirl: Sprinkle the cinnamon-swerve mixture evenly over the dough, leaving a small border around the edges.
Roll and Bake: Starting from the short end, tightly roll the dough into a log. Pinch the seam to seal it. Carefully place the log, seam-side down, into your parchment-lined loaf pan.
Bake to Perfection: Bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve: Let the loaf cool in the pan for at least 20 minutes before transferring it to a wire rack to cool completely. Once cool, slice and enjoy!
Optional: Drizzle low-carb icing over top of loaf.

1. Can I use a different sweetener?
Absolutely! This recipe works well with most 1:1 sugar replacement sweeteners like monk fruit or other erythritol blends. Keep in mind that different sweeteners may have slightly different levels of sweetness, so you can adjust to your personal taste.
