Keto Lamb Sopes

Did you know you can make sopes using Sonora Keto Tortilla Mix?  Sopes are open-faced masa shells filled with your favorite seasoned protein -- similar to a tostada but with a thicker, softer shell. Fill with savory beef, lamb, pork, chicken or even keto-friendly black soy beans to make a filling and deliciously low-carb meal! 

INGREDIENTS
Tortilla Ingredients

 

Filling Ingredients

  • 1 tbsp. olive oil
  • 1/2 yellow onion, sliced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup crumbled Queso Fresco
  • 1 teaspoon chile powder
  • 1 lb ground lamb
  • ½ cup cilantro
  • 1 diced tomato
  • 2 cups shredded lettuce

 

INSTRUCTIONS
Step 1
Combine Sonora Keto Tortilla mix with 1 cup warm water, 1 tablespoon melted lard or olive and mix well.

Step 2
Wrap tortilla dough in plastic and chill in refrigerator for 1 hour.

Step 3
Remove dough from fridge and form eight balls. Then flatten the dough balls until approximately 1/4" thick. Form 1/2" walls around the edges to form cups.

Step 4
In a skillet on medium high, lightly toast the bottom side of the sope shell until slightly golden. This will help hold the dough together when frying.

Step 5
In a pan with approximately 1" of safflower oil at 380°F, fry each sope shell. Fry one side until golden, then flip and cook the other side until golden. Set aside on paper towels.

Step 6
In a skillet over medium-high heat with olive oil, cook the ground lamb with the onion, chile powder, salt and pepper. Drain lamb meat after cooked.

Step 7
Fill each cup with the lamb mixture, topping with queso fresco, tomato, cilantro and lettuce. Provecho!

Makes 8 sopes!
