Ingredients

  • 2 medium turnips, chopped (or 1 medium rutabaga, peeled and chopped)
  • 9 oz pork chorizo
  • 1–2 tablespoons coconut oil (or preferred cooking oil)
  • Salt, to taste

Optional Add-Ins:

  • Diced onion
  • Sliced jalapeño
  • Queso fresco for serving

Directions

  1. Prepare the Vegetables: Peel and chop the turnips—or rutabaga—into small, evenly sized cubes.

  2. Heat the Oil: Warm the coconut oil in a large skillet over medium heat.

  3. Cook the Turnips or Rutabaga: Cook turnips 8–12 minutes or rutabaga 10–15 minutes, stirring occassionally until softened and lightly browned

  4. Add the Chorizo: Add the pork chorizo and cook 5–7 minutes, breaking it apart and combining with the vegetables

  5. Finish and Adjust: Taste and season with salt. Add jalapeño if desired.

  6. Serve: Serve hot with queso fresco, eggs, or in tortillas.
