Keto Pudding Donuts

Ingredients

  • 1 cup super fine almond flour
  • 2 tablespoons psyllium husk powder
  • 2 teaspoons baking powder
  • 1 (1-ounce) package Jell-O sugar-free pudding mix (vanilla or flavor of choice)
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted
  • 1/4 cup heavy cream, warmed

Directions

  1. Preheat your oven to 350°F (175°C). Lightly grease a donut pan.

  2. Mix dry ingredients: In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, pudding mix, and salt.
  3. Add wet ingredients: Whisk in the eggs and melted butter until smooth. Pour in the warmed heavy cream last—this activates the psyllium and helps bind the batter.
  4. Fill the donut pan: Transfer the batter to a piping bag or a freezer bag with a corner cut off. Pipe or spoon the batter into the prepared donut pan, filling each mold about three-quarters full.
  5. Bake: Bake for about 25 minutes, until the donuts are lightly browned and begin to pull away from the sides of the pan.
  6. Cool and remove: Let the donuts cool slightly. Gently twist each donut to release it from the pan.
  7. Add toppings: Roll warm donuts in a mixture of cinnamon and powdered sweetener, or drizzle with melted jamoncillo for a decadent finish.
