Sonoran Keto Nachos

Ingredients

    For the Nachos

    • 12 SONORA Keto Tortillas
    • 1 cup diced tomato
    • 2 cups shredded yellow cheese
    • 2 sliced green onions
    • 1 cup cooked black soy beans
    • 2 sliced jalapeños
    • 1 lb ground beef (optional)
    • Oil for frying

    For the Keto Tortillas

    Directions

      Make the Keto Tortillas

      1. In a bowl, combine the SONORA Keto Tortilla Mix with the egg and warm water.

      2. Mix until a dough forms, then knead briefly until smooth.
      3. Divide the dough into 12 equal portions and roll each into a thin tortilla.
      4. Cook each tortilla on a hot griddle or skillet for 1-2 minutes per side until lightly golden.
      5. Set aside to cool completely.

      Make the Tortilla Chips

      1. Cut each cooled tortilla into quarters to make triangular chips.

      2. Heat oil in a large skillet over medium-high heat.
      3. Fry the tortilla quarters in batches until they just start to turn golden.
      4. Remove and drain on paper towels. They will continue to crisp as they cool.

      Prepare the Toppings

      1. If using ground beef, cook it in a skillet until browned and fully cooked. Season with salt and pepper.

      2. Dice the tomatoes and slice the green onions and jalapeños.
      3. Warm the black soy beans if desired.
      4. Shred the cheese if not already done.

      Assemble the Nachos

      1. Preheat your oven to broil.

      2. Arrange the tortilla chips on individual plates or a large baking sheet.
      3. Layer the toppings starting with the driest ingredients closest to the chips to prevent sogginess.
      4. Add ground beef (if using), black soy beans, half of the cheese, tomatoes, green onions, and jalapeños.
      5. Top with the remaining cheese.

      Finish and Serve

      1. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly.

      2. Watch carefully to prevent burning.
      3. Remove from oven and serve immediately while hot and crispy.
      4. Garnish with additional green onions or jalapeños if desired.
