Turkish Chicken

Ingredients

  • 3 lbs chicken thighs, boneless and skinless
  • 1 cup sour cream
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp no-sugar-added ketchup
  • 1 tbsp garlic salt
  • 2 tbsp Aleppo red pepper flakes (or substitute with paprika + a pinch of cayenne)
  • 1 1/2 tsp ground cumin
  • 1 tsp ground pepper
  • 1 tsp paprika
  • 1/8 tsp cinnamon

Directions

  1. Prepare the Marinade In a large bowl, whisk together sour cream, lemon juice, olive oil, ketchup, garlic salt, Aleppo pepper flakes, cumin, ground pepper, paprika, and cinnamon until smooth and well combined.

  2. Marinate the Chicken Add the chicken thighs to the bowl. Open each thigh slightly so the marinade coats every crevice. Cover with plastic wrap and refrigerate for at least 1 hour to let the flavors soak in. (Overnight is even better.)
  3. Skewer the Chicken Thread the marinated chicken onto two skewers per piece. The double skewers make it easier to flip on the grill.
  4. Grill to Perfection Preheat your grill to medium-high heat. Support the skewers on bricks or the grill edges so the meat doesn't rest directly on the grates. Grill, turning occasionally, until about 20% of the surface has a light char—this gives the chicken its signature flavor. Total grill time is about 15–20 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Serve Slide the chicken off the skewers, garnish with fresh parsley if desired, and pair with your favorite salad.
